Lunch will be offered by Sweet Dreams Catering. On the Group Tour only days, Monday and Tuesday, lunch will be offered by reservation only. Lunch will also be offered to groups and individuals on Wednesday through Friday, 11 a.m. to 1:30 p.m. and reservations are encouraged. Lunch is not served on the weekends. Last year, Sweet Dreams Catering offered a wonderful meal to the lunch room diners. A popular and often requested recipe off of their menu was the Poppy Seed Salad Dressing that was on a beautiful spring salad. Not only will they be serving it again this year, but they have also been kind enough to share the recipe with us. Enjoy!
Poppy Seed Salad Dressing
1/3 Cup Cider Vinegar
3/4 Cup Sugar
1 Small Onion (Cut into Wedges)
1/2 Teaspoon Salt
1/2 Teaspoon Ground Mustard
1 Cup Oil (Vegetable or Canola)
2 Teaspoons Poppy Seeds
In a blender or processor, combine all of the ingredients and process until smooth. Pour over salad right before serving. Store remaining dressing refrigerator.
A suggested salad to serve with this dressing would consist of mixed greens, sliced strawberries, mandarin oranges, pineapple chunks, Ramen Noodles, Parmesan cheese and slivered almonds.
